This is going to be a super duper fast recipe that I am going to post up here for you guys. It's very simple and very heart-healthy {and waistline healthy too ;)}.
This will probably take you only two seconds to make and you can store it in your fridge for a few days and have it as a snack or a side dish for lunch or dinner.
This recipe was taken from 1001recipe.com and the main ingredient and star of this recipe is beans and corn. ;)

Black Bean and Corn Salad

Quick and flavorful southwestern salad that makes a great potluck dish. It is also very healthy and packed with iron, fibre and vitamin C.

Ingredients
Black beans: 1 can
Corn: 1 can
Cherry Tomatoes: 1 cup (or 2 medium tomatoes), diced
Fresh cilantro: 2 tbsp, chopped
Fresh lemon juice: 2-3 tbsp
Olive oil: 1-2 tbsp
Salt and black pepper: to taste
Cayenne pepper: 1/4 tsp (optional)

Directions
1. Drain the corn and beans and rinse in cold water.
2. Mix all ingredients in a salad bowl.
3. Taste and adjust the seasoning if necessary.


Yup...that's right. That's it! Lol. Told ya it was quick!
It's very important to drain and rinse the beans to take all that excess sodium and starch off them.
I'm also not a huge fan of cilantro ~ if you guys aren't either, I am sure you can substitute the herb with another one or omit it all together.
Sometimes I like to thinly dice some celery, carrots and red onion and throw that in the mix as well. I also thought of another great ingredient to throw in as well ~ diced avocado! :)
And another option for the dressing is to use red wine vinegar instead of the lemon juice, or balsamic vinaigrette.
