Morning! Happy Tueday! :) New magazine dayyy.
I have a few recipes lined up for you guys to try, first we are going to try out a mushroom appetizer that I found on the Betty Crocker website. ;) It looks delicious and super easy and simple to make and doesn't call for a lot of ingredients. 
Later on I am going to post a grilled corn and potato chowder...something hearty and warm for days like today - cold and rainy. 
I am quite surprised that it still hasn't snowed yet and December is just mere days away. 
Anyways - this next recipe I have tried a variation of that included crab but this sounds just as yummy, just make sure to pick out large mushrooms.

Sausage-Stuffed Mushrooms
Looking for a cheesy appetizer using Original Bisquick® Mix? Then check out these baked bites made my stuffing sausage into mushroom caps - ready in 35 minutes. 

Prep Time: 20 minutes
Total Time: 35 minutes
Servings: 36

Ingredients
36 large fresh mushrooms {about 2lbs}
1lb bulk pork sausage
1/4 cup freeze-dried chopped chives
2 tablespoons chopped onion
1 clove garlic, finely chopped
3/4 cup Original Bisquick® Mix
1/4 cup Italian-Style bread crumbs
1/4 cup grated Parmesan cheese

Directions
Heat oven to 350F. Remove stems from mushrooms; finely chop stems. 
In 10-inch skillet, cook sausage, chopped mushroom stems, chives, onion and garlic until sausage is no longer pink; drain, reserving drippings. Stir in Bisquick mix and bread crumbs into sausage mixture until mixture holds together. {If mixture is dry, add 1 to 2 tablespoons reserved drippings.}
Spoon about 1 rounded tablespoon sausage mixture into each mushroom cap. In ungreased 15x10x1-inch pan, place filled mushrooms, sprinkle with cheese.
Bake about 15 minutes or until hot. Serve immediately.


This would make a great appetizer for those Christmas parties that are coming up and I am pretty sure they aren't that high in calories. 
I will definitely be trying these this weekend & will let you know how they turn out. 
On another note, I tried the kale recipe and for some reason it didn't work out for me. They didn't come out too crispy and they were salty as all hell. 
Make sure to not over-salt them! Or you will end up throwing it in the trash like I did.
